Roasted mullet roe served with turnip slices and leek

Mullet is a fish that migrates according to the seasons. Every year at the end of December, mullet migrate to the sea southwest of Taiwan.
Shin Yeh chooses mullet with a beautiful color and luster, lots of fat and are plump with roe. The roe is removed, along with its covering and roasted. This dish is served with turnip slices. When you put the two together into your mouth, you’ll experience a sensation that is fresh, crisp, soft and chewy - all at the same time.
